A dry-tempered pork curry with a wonderful taste

The flavour of pork cooked in oil is truly indescribable. To achieve this mouth-watering taste, it is necessary to add well-mixed spices and boil it on low heat until it has the perfect consistency. Amongst the meats enjoyed by Asians, pork holds a special place. However, they are cautious when eating pork because they believe that it can cause stomach infections. To reduce the risk of such infections, they often add more chillies to their dishes. This belief has been passed down through generations, and many Asians believe that the use of chillies has a protective effect against stomach infections.

Below is a detailed list of ingredients required to prepare a delicious Pork Curry

 Pork: 750g of pork is needed for this recipe. You can use any cut of pork you prefer.

Indian Shallots: Half a cup of finely chopped Indian shallots are required to add a sweet and mild onion flavour to the curry.

Tomatoes: Four medium-sized tomatoes cut into quarters are needed to add a tangy and juicy flavour to the curry.

Bombay Onions: Two medium-sized onions finely chopped and sautéed in oil until golden. Add a sweet and savoury flavour to the curry.

Green Chilies: Five green chillies cut into quarters are added to the curry for a spicy kick.

Turmeric: One teaspoon of turmeric is added to the curry for its vibrant yellow colour and earthy flavour.

Salt: One teaspoon of salt is needed to enhance the flavour of the curry. Garlic: Seven garlic cloves are crushed and added to the curry for a pungent and savoury flavour.

Ginger: A piece of finely chopped ginger is added to the curry for a warm and spicy flavour.

Curry Leaves: A spring of curry leaves is added to the curry for its fragrant and slightly bitter flavour.

Black Pepper: Add three tablespoons of crushed black pepper to the curry for a bold and spicy flavour.

Vinegar: A quarter cup of vinegar is added to the curry to give it a slightly sour taste and to tenderise the meat.

Coconut Oil: Two tablespoons of coconut oil are used to sauté the onions and to add a nutty and sweet flavour to the curry.

Water: Two cups of water are added to the curry to create a flavourful gravy.

Cinnamon: Two inches of cinnamon are added to the curry for a warm and sweet flavour.

Pandan Leaf: A piece of pandan leaf is added to the curry for its unique sweet aroma.

Red Chillies: Ten ground-dried red chillies are added to the curry for a fiery and spicy flavour.

Method of making

Begin by thoroughly washing the pork and cutting it into small pieces. Adding some fatty bits to it is recommended to enhance the dish’s flavour. Take a pan and put it on the stove. Add oil to the pan and let it heat up well. Once the oil is hot, add Bombay onion, pandan leaf, curry leaves, ginger, cinnamon, and garlic. Temper these ingredients well.

When the mixture turns golden brown, add Indian shallots. Next, add turmeric powder and allow it to cook well for about 10 seconds. After that, add the pork and salt to the mixture. Stir well and add ground chilli powder. Mix everything together until the pork is well coated with the spices. Then, add water to the pan and let it boil until the meat is cooked through.

Once the water reduces, add vinegar to the mixture and let it simmer for around a minute. This will further enhance the flavour of the dish. Finally, add chopped tomatoes, green chillies, black pepper, and more curry leaves. Mix everything well and take it off the heat. Your delicious pork curry is now ready to be served.
