How to make Prawn Curry
To make the curry:
- Start by heating a deep saucepan over medium heat.
- Add 5-6 tablespoons of cooking oil and let it heat up.
- Once the oil is hot, add mustard seeds and fry them until they start crackling.
- Be careful not to burn them.
Next, add curry leaves to the pan and let them simmer for a few seconds. This will release the aroma and flavour of the curry leaves. Then, add chopped onions to the pan and sprinkle some salt as needed. Stir the mixture well and cook until the onions are soft and translucent.
Now, add tomato paste to the pan and mix it well with the onions. Cook the mixture for about 5 minutes until the oil is rendered. This will help to bring out the flavours of all the ingredients.
Next, add the previously prepared paste to the pan and mix it well with the rest of the ingredients. Cook the mixture on low heat for about 10 minutes. This will help to thicken the curry and bring all the flavours together.
Once the curry has thickened, add seasoned prawns to the pan and mix well. Cook the prawns on low flame for a few more minutes until they are cooked through.
Now, pour one cup of water into the pan and mix well. Let the curry simmer on low heat until it becomes thick and creamy.
Finally, add a few drops of lime juice to the pan and mix well. This will add a tangy and refreshing flavour to the curry. Serve the curry hot with some rice or bread.
